Reports to: MLB Executive Performance Chef
Status: Seasonal hourly
Location: San Francisco, CA (travel to Scottsdale AZ for Spring Training)
 
Position Summary:
The San Francisco Giants Baseball Club are seeking an MLB Performance Cook to join the Baseball Operations department. The Performance Cook will be a key figure in supporting the MLB Executive Performance Chef in optimizing the performance, recovery, and health of Major League players by delivering top-tier food and nutrition services to both athletes and staff of the San Francisco Giants. This role will be based out of Oracle Park in San Francisco California during the regular MLB season as well as postseason. During Spring Training (February- March) this role would take place at the San Francisco Giants spring training facility in Scottsdale Stadium in Scottsdale Arizona.
 
The Performance Cook will assist the MLB Executive Performance Chef and Performance Sous Chef on the day-to-day culinary operations in the performance kitchen as assigned by the MLB Executive Performance Chef including but not limited to menu design, food and snack preparation, stocking of beverages and snacks, receiving inventory, overseeing storage, and dishes and sanitation procedures.
 
This position assists with cookery while making sure that all proper food safety protocols are followed. 
 
Position Responsibilities:
 
·         Support and execute the culinary vision of the MLB Executive Performance Chef and while aiding in enhancing the culinary program.
·         Ensure proper health and performance of all San Francisco Giants players, coaches, training staff, and clubhouse employees.
·         Provide food/beverages of the highest nutritional value possible at all times.
·         Must be well versed in all ethnicities of cuisine, especially Latin
·         Maintaining all nutritional guidelines for the team, and associated staff.
·         Assist with recipe development including proper nutrition into every dish
·         Work with Performance Dietitians to develop proper guidelines and executing them.  (Meal placement, meal timing, menu review.)
·         The ability to execute meal preparation specific to dietary needs as guided by the Performance Dietitian and other medical staff.
·         Receiving and inspecting order shipments to ensure they are as ordered and up to the quality standards
·         Continue to develop future growth in team performance with performance dining program
·         Maintain and follow all local Health Department food preparation codes and regulations.
·         Works with the Chef to hire, train, supervise, schedule and participate in activities of chefs, cooks, and associates involved in preparing, cooking and presenting food.
·         Assist with audit of food storeroom items and storage to maintain consistent quality products using FIFO (first in, first out) and ensure adherence to all health code requirements.
·         Ensure back of house area adheres to the highest standards of cleanliness, presentation, and service.
·         Monitor equipment operation, perform preventative maintenance, troubleshoot breakdowns, maintain supplies, and call for repairs as necessary.
·         Ensure compliance with all food-handling and sanitation regulation.
·         Execution of Prepared Meals for Staff & Baseball Players under time restraints.
·         Daily tasks which may include protein butchery / vegetable preparation / Carbohydrate preparation
·         Support all prep, cooking, and front of house duties as directed by the MLB Executive Performance Chef and Performance Sous Chef
·         Ensure the daily operation of the back of house adheres to operating procedure guidelines
·         Perform food preparation tasks for all fruits, vegetables, meats, poultry, fish, etc. used in recipes
·         Prepare all food items per recipe guidelines, tasting and adjusting for flavor with assistance of chef
·         Ensure back of house area adheres to the highest standards of cleanliness, presentation, and service
·         Monitor supply levels in back of house area and replenish as necessary
·         Monitor equipment operation, perform preventative maintenance, troubleshoot breakdowns, maintain supplies, and call for repairs as necessary
·         Ensure compliance with all food-handling and sanitation regulations
·         Ensure all tasks are performed efficiently and within food safety guidelines
·         Stay up to date on current performance based culinary trends
·         Must be able to coincide with performance departments requests to maximize performance using high end techniques
·         Holds self-accountable for the highest standards of service and food production.
·         Keep a professional relationship with staff and players
·         Provide a professional and positive work environment
·         Must be willing to learn new techniques and safe food practices
·         Contacting food distributors to set up healthy relationships.
·         Exceptional organizational and time management skills
·         Other duties as assigned by the MLB Executive Performance Chef 

 Skills and Qualifications:   
·         Minimum of 1+ years’ experience as a chef. Experience working with sports teams is preferred.
·         Graduate of a culinary institute or similar education/background.  Nutrition Certification a plus.
·         Knowledgeable in culinary terms, knife skills and safe food handling.
·         Understands and complies with food safety and temperature standards.
·         Food Service Manager’s certification required according to local and state law.
·         Able to work non-traditional hours and remain flexible regarding work schedule.
·         Ability to handle confidential matters and information with discretion and diplomacy
·         Excellent communication skills, both written and verbal
·         Must be able to stand for long periods of time
·         Must be able to lift up to 25+ lbs.
·         Pass a background check.
·         Must be a team player
·         Ability to maintain a positive and professional working environment
·         Possess a growth mindset
At the San Francisco Giants, we carefully consider a wide range of factors when determining compensation, including your background and experience. These considerations can cause your compensation to vary. The hourly rate for this position ranges from $20.00 - $25.00.
