Location: Boca Chica, Dominican Republic (Felipe Alou Baseball Academy)
Position Summary:
The San Francisco Giants are seeking a Performance Sous Chef to join the Baseball Operations department. This position will play a key role in supporting the Performance Chef by optimizing performance, recovery, and health for the players of the Felipe Alou Academy through the delivery of top-level food and nutrition services for both athletes and staff of the San Francisco Giants.
The Performance Sous Chef will oversee the daily culinary operations in the performance kitchen, including but not limited to menu design, managing and training new staff, scheduling work hours, overseeing storage, inventory, and sanitation procedures.
This position supervises and assists in the kitchen while ensuring all food safety protocols are strictly followed.
Position Responsibilities:
● Support the Performance Chef in overseeing daily operations from food preparation to plate presentation, contributing to the continuous improvement of the culinary program.
● Contribute to the design of balanced menus tailored to the nutritional needs of athletes, offering varied, healthy, and high-quality options.
● Know diverse cuisines, with an emphasis on Latin cuisine.
● Coordinate and supervise the kitchen assistant team, fostering a culture of teamwork, continuous learning, and adherence to quality standards.
● Ensure dishes are prepared according to established culinary standards, focusing on presentation and food safety at all times.
● Collaborate in managing inventory, ensuring efficient use of available resources, and placing orders when necessary.
● Support the purchase of the highest quality local ingredients within the annual budget.
● Ensure strict adherence to hygiene and food safety regulations to maintain a safe and clean work environment.
● Assumed additional leadership duties in the absence of the Executive Chef.
● Perform other duties as assigned.
● Work with the Performance Chef in training, supervising, and scheduling the culinary staff, promoting skill development, and contributing to the professional growth of each team member.
● Be willing to step in and assist in any station or staff member's role as needed, including daily menu dish preparation.
● Show willingness to learn new techniques and improve food safety practices.
● Support all kitchen, service, and prep area tasks as directed by the Performance Chef.
● Implement advanced culinary techniques to maximize player performance based on the requests of the Performance Nutrition team.
● Contribute to the continuous development of the menu to diversify options and meet the needs of the team and staff.
● Other duties assigned by the Performance Chef.
Skills and Qualifications:
● 1+ years in a similar role as a Sous Chef, Chef de Partie, or in a professional culinary environment.
● Solid knowledge of culinary techniques, kitchen management, quality control, and food safety.
● Ability to lead and motivate a kitchen team, prioritizing collaboration, effective communication, and working under pressure.
● Flexibility to adjust to changing schedules and needs, particularly in a dynamic environment like a professional baseball academy.
● Ability to anticipate the needs of the team and players, maintaining a service-oriented focus on excellence.
